Northwind Coffee Roasters is a small-batch specialty roaster in the Pearl District of Portland, Oregon. Since 2014 we have sourced green coffee directly from farmers and cooperatives we visit in person, paying prices well above the commodity market so that quality and livelihoods can improve together. Every lot we buy is traceable to a specific farm, washing station, or cooperative, and we publish those relationships openly because transparency is part of what makes a cup worth drinking.
We roast on a restored 1970s drum roaster because it gives us fine control over how heat is applied through each phase of development. Lighter roasts preserve the delicate florals and bright acidity of high-grown Ethiopian and Kenyan coffees, while our medium roasts coax caramel sweetness and body out of Latin American beans. Nothing is roasted more than a few days before it ships, so what arrives at your door tastes the way it did the morning it left the cooling tray.
How we roast
Roasting is equal parts craft and measurement. For each new arrival we cup the green coffee, design a roast profile, and then refine that profile across several test batches before it ever reaches production. We log bean temperature, rate of rise, and development time for every batch, and we taste daily to make sure a profile that looked good on paper actually sings in the cup. When a coffee changes with the seasons, our profiles change with it.
Freshness is not a marketing word here. Coffee is at its most expressive in the two to four weeks after roasting, so we roast to order in small volumes rather than warehousing pallets of stale bags. If you subscribe, you choose the cadence and we time the roast to your delivery, which means you are always brewing coffee that is genuinely fresh rather than merely recent.

Our cafe and roastery share one airy room, so you can watch a batch come together while a barista dials in an espresso for you. We pour filter coffee on a rotating menu of single origins, bake pastries in house each morning, and host free public cuppings every Saturday where anyone can taste through the current lineup and learn to describe what they are tasting. Whether you are a seasoned home roaster or someone who just wants a really good cup, you are welcome at the bar.
